Ingredients
6 bone-in, skin-on chicken thighs, trimmed
1 tsp salt
1 tsp black pepper
3 Tbs vegetable oil
1 apple, sliced
3 medium shallots, peeled and quartered
1 1/2 cups baby carrots
8 sprigs fresh thyme
1 1/3 cups apple cider
2/3 cup chicken broth
1/4 cup honey
2 Tbs Dijon mustard
2 Tbs unsalted butter
Directions
  1. Place the chicken on a plate. Sprinkle with salt and pepper on both sides. Add the vegetable oil to a large Dutch oven. Over high heat, sear the chicken until golden on both sides. Remove, and set aside. Add the apples, shallots, carrots and thyme. Sauté for 2 to 3 minutes. Push those ingredients to the sides of the pot.
  2. Add the cider, broth, honey and mustard to the middle. Stir in the butter until melted. Add the chicken back to the Dutch oven. Bring to a simmer. Reduce heat to low. Cover, and cook for 30 to 40 minutes until chicken is cooked through.
